Ah, the smell of bread baking will have your mouth watering. Hard Wheat is used to make bread flour. The variety of hard wheat we grow has very good baking characteristics.

Soft Wheat is used to make pastry flour. Mind you, we're not pie makers ourselves but all of our pastry flour testers have told us Weatherbury's pastry flour makes absolutely the best pie crusts.  We are quite fond ourselves of the delicious cakes made with the pastry flour.

Rye is the traditional bread for people from Germany east to Russia and north to Scandinavia. This area is known as the rye belt because it is where most of the world's rye is grown and consumed.
Since the Whiskey Rebellion, Washington County has also been known for its rye (specifically rye whiskey). If you've had rye whiskey from Wigle Whiskey, you've probably tasted liquid Weatherbury rye.  Not to worry, Weatherbury will be milling rye into flour.
